Harvest and selection by hand. Fermented for 7 days at 26ºC. Macerated for 12-16 days and two pumped overs per day. Not cold stabilised. It was lightly filtered before bottling.
12 months in 225L Allier oak barrels. Subsequently aged in the bottle for 4 months prior to release.
